Scones
- 2 cups all-purpose flour
- ½ cup light brown sugar
- 1 tbsp baking powder
- ½ tsp kosher salt
- 1 cup rhubarb fresh, diced
- 1¼ cup heavy whipping cream
Topping
- 1 tbsp light brown sugar
- 3 tbsp unsalted butter melted

Let's Begin!
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, mix in flour, sugar, baking powder, and salt. Stir in the diced rhubarb.
- Add the cream and stir just until dough forms. Knead gently in the bowl just until the dough holds together. *do not over mix
- Form the dough into a 10-inch diameter circle, ¾ inch thick, on the prepared baking sheet. Cut the dough into 8 wedges and spread scones 2 inches apart from one another.
- Sprinkle the scones with 1 tbsp of sugar.
- Bake the scones for 20-25 minutes or until very light golden brown, *Do NOT over-bake or they will dry out.
- Brush with melted butter and serve warm.
