Light Brown Sugar or Regular White Sugar?

When it comes to picking a type of sugar for baking, the two main options are light brown and regular white. Both sugars can work to sweeten various recipes, but there is a difference between them. Light brown sugar has more moisture from molasses and creates a soft texture with greater flavor complexity than white sugar. This can be beneficial when looking to add some warmth to baked goods and desserts like cookies, scones, and cakes.

On the other hand, regular white sugar has fewer impurities which might be desirable when making lighter-flavored items like meringues or angel food cakes. Taking time to consider the recipe at hand will help determine which type of sugar to use for optimal results!
