Crust

  • 1 cup all-purpose flour
  • ¼ cup bran cereal Optional. if omitting, add another 2 Tbsp flour
  • cup light brown sugar
  • ¼ tsp salt
  • 1 stick unsalted butter cold, cut into small pieces

Filling

  • 2 Tbsp granulated sugar
  • ¼ cup sour cream
  • ¼ teaspoon vanilla extract
  • 4 oz cream cheese softened
  • ½ teaspoon lemon zest finely grated
  • 1 ⅓ cups blueberries fresh
  • ¼ cup honey or agave

Let's Begin!

    Crust

    • First, Preheat oven to 375°F. In a food processor, combine flour, bran, sugar, salt, and butter; process until large moist crumbs form.
    • Spoon dough into individual tart pans. Press the dough into the tart pan and up the sides until firmly packed. Then, freeze for about 10 minutes. Prick the bottom of dough all over with a fork. Bake for 10-12 minutes.

    Filling

    • Whisk together granulated sugar, sour cream, and vanilla in a small bowl until the sugar is dissolved.
    • Beat cream cheese in a medium bowl with an electric mixer until fluffy and smooth, then add sour cream mixture and zest, beating until just combined well.
