Baked Apple Doughnuts

These baked apple doughnuts are a classic fall treat, and they're surprisingly easy to make at home. Made with fall spices and apple cider. You will enjoy them as breakfast or as an afternoon snack, these are sure to satisfy your sweet tooth.

Ingredients
  

Doughnuts:

  • 2 cups almond flour
  • 3/4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 tsp apple pie spice
  • 1/4 tsp kosher salt
  • 2 small egg
  • 4 oz. milk see notes for a vegan substitute
  • 12 oz. apple cider
  • 2 tsp butter unsalted
  • 8 tbsp brown sugar
  • 1 tsp vanilla extract

Autumn toppings:

  • 7 tbsp butter
  • 8 oz. granulated sugar
  • 1 tsp apple pie spice
  • 3/4 tsp cinnamon

Instructions
 

Make the fluffy dough:

  • Preheat the oven to 350°F and grease the donut pan. Set aside.
  • In a large bowl, stir to combine the almond flour, baking powder, baking soda, apple spice, nutmeg, and cinnamon. Set them aside.
  • In a separate bowl, beat the eggs into butter, brown sugar, milk, and vanilla extract until smooth then stir to combine them into an all-purpose flour mixture and add the apple cider. Mix them well.
  • Over a floured surface, knead the dough until fluffy then transfer them to the pastry bag with the tip off.
  • On a greased donut pan, pipe the dough and fill each donut molding and bake for 15-20 minutes or until golden brown.
  • Allow to cool and brush each donut with melted butter.

Mix the autumn toppings:

  • In a large bowl, combine the remaining apple spice, cinnamon, and sugar.

Dunk and serve!

  • Dunk the cooled greased donuts into autumn toppings.
  • Serve right away and enjoy!

Notes

Vegan Substitution Tips
  • Eggs: The best vegan egg substitute is flax seeds.
  • Butter: Look for vegan butter it's either homemade or store-bought.
  • Milk: Feel free to choose your favorite plant-based milk.
  • Flour: To make this recipe gluten-free use certified gluten-free flour.
Recipe Tips
  • Start with a good-quality apple cider. Homemade applesauce is best, but store-bought will also work. Avoid using canned applesauce, as it is usually too sweet and will result in doughnuts that are too soft.
  • Add spices to the applesauce to give the doughnut flavor. Cinnamon, nutmeg, and allspice are all good choices.
  • Be careful not to overmix the batter. Overmixing will result in tough doughnuts.
  • Use a light hand when shaping the doughnuts. After they are baked, they should be light and fluffy, not dense and heavy.
