Baked Apple Doughnuts

Doughnuts:
- 2 cups almond flour
- 3/4 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 2 tsp apple pie spice
- 1/4 tsp kosher salt
- 2 small egg
- 4 oz. milk see notes for a vegan substitute
- 12 oz. apple cider
- 2 tsp butter unsalted
- 8 tbsp brown sugar
- 1 tsp vanilla extract
Autumn toppings:
- 7 tbsp butter
- 8 oz. granulated sugar
- 1 tsp apple pie spice
- 3/4 tsp cinnamon
Make the fluffy dough:
Preheat the oven to 350°F and grease the donut pan. Set aside.
In a large bowl, stir to combine the almond flour, baking powder, baking soda, apple spice, nutmeg, and cinnamon. Set them aside.
In a separate bowl, beat the eggs into butter, brown sugar, milk, and vanilla extract until smooth then stir to combine them into an all-purpose flour mixture and add the apple cider. Mix them well.
Over a floured surface, knead the dough until fluffy then transfer them to the pastry bag with the tip off.
On a greased donut pan, pipe the dough and fill each donut molding and bake for 15-20 minutes or until golden brown.
Allow to cool and brush each donut with melted butter.

- Butter: Look for vegan butter it's either homemade or store-bought.
- Milk: Feel free to choose your favorite plant-based milk.
