Cupcakes

  • 1 cup all-purpose flour
  • ¼ cup Dutch-processed cocoa powder
  • cup granulated sugar
  • tsp baking powder
  • 1 pinch kosher salt
  • ½ cup unsalted butter softened
  • ½ cup whole milk
  • 1 large egg
  • ¼ tsp vanilla extract

Decoration

  • buttercream
  • food coloring red and blue
  • pop rocks or sprinkles

Instructions
 

Let's Begin!

  • Preheat oven to 350°F.
  • In a bowl of a stand mixer, place the flour, cocoa powder, sugar, baking powder, salt, and butter with the paddle attachment.
  • Beat on a slow speed until you get a sandy consistency and everything is combined.
  • Whisk the milk, egg, and vanilla extract together in a jug, then slowly pour about half into the flour mixture.
  • Beat to combine and turn the mixer up to high speed, scraping any mixture from the side of the bowl with a rubber spatula.
  • Pour in the remaining liquid and continue mixing for a couple more minutes until the mixture is smooth. Do not overmix.
  • Spoon the mixture into the cupcake liners until approximately two-thirds full.

Let's Bake and Decorate!

  • Bake for 20-25 minutes, or until the cupcakes bounce back when touched and a skewer inserted into the center comes out clean.
  • Leave the cupcakes to cool slightly in the tray before turning them out onto a wire cooling rack to cool completely.
  • Hollow out a circle from the top of the cupcakes, fill the cupcakes with pop rocks, then cover them with the cake lid.
  • Decorate the cupcakes with the buttercream frosting of your desired colors.
  • Serve and enjoy with family and friends!
