Lemon Blueberry Sweet Rolls

These ooey-gooey swirls of goodness filled with tart lemon and juicy blueberries are sure to become your new favorite brunch indulgence. Not only do they make a heavenly addition to any morning celebration or lazy weekend lounging around the house, but they're also surprisingly easy to whip up in your kitchen!

Ingredients
  

Let's gather the ingredients!

Rolls

  • cups all-purpose flour
  • 3 tbsp granulated sugar
  • 1 tsp kosher salt
  • 1 packet instant yeast
  • ½ cup water
  • ¼ cup milk
  • tbsp unsalted butter
  • 1 large egg

Filling

  • cups blueberries frozen, not thawed
  • ¼ cup granulated sugar
  • 1 tsp cornstarch
  • 1 tsp lemon zest

Glaze

  • 1 lemon zest and juice
  • 1 cup confectioner's sugar
  • ½ tsp vanilla extract
  • tbsp milk

Let's Begin!

    Filling

    • Combine the frozen blueberries, sugar, and cornstarch in a medium bowl. Gently toss it around and let sit. Set aside.

    Dough

    • Set aside 1/2 cup of flour. In a large bowl, toss the remaining flour, sugar, salt, and yeast together. Set aside.
    • Heat the water, milk, and butter together in the microwave until the butter is melted and the mixture is warm to the touch. Stir the butter mixture into the flour mixture. Add the egg and only enough of the reserved flour to make a soft dough.
    • The dough will be ready when it gently pulls away from the side of the bowl and has an elastic consistency.
    • On a lightly floured surface, knead the dough for about 5-6 minutes. Place in a lightly greased bowl and let rest for about 20 minutes.

    Let's Shape and Bake!

    • Roll the dough out in a 14x8-inch rectangle. Pour the sugared blueberries on top and gently spread them to cover the dough surface. Roll up the dough tightly.
    • Cut the dough into 12 even pieces and place in a lightly greased 9x9-inch square pan.
    • Loosely cover the rolls with a clean cloth and allow them to rise in a warm, dry place for 1-2 hours.
    • After the rolls have doubled in size, preheat the oven to 375°F.
    • Bake the rolls for 25-30 minutes until lightly browned.

    Glaze

    • Mix all of the glaze ingredients together. If you prefer a thicker glaze, add more powdered sugar and then add salt to cut the sweetness, if desired. If you’d like it thinner, add more milk. Pour over sweet rolls.
    • Garnish with more lemon zest on top, if desired.
