Cupcakes

  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp kosher salt
  • ¼ cup unsalted butter softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ cup whole milk
  • 1 small lime juice and zest
  • 1 tbsp tequila optional

Frosting

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tbsp tequila optional
  • ½ tsp vanilla extract

Let's Begin!

    Cupcakes

    • Preheat the oven to 350°F. and line a muffin pan with cupcake liners.
    • In a small bowl, whisk together the flour, baking powder, and salt.
    • Using an electric mixer on medium-high, mix the butter until it is smooth, add in the sugar, and continue mixing until everything is thoroughly combined.
    • Next mix in the egg and vanilla extract. Continue to mix until combined.
    • Switch the mixer to a low speed and add in the milk, lime juice, lime zest, and tequila. Blend well until everything comes together.
    • Add in the flour mixture and continue mixing until combined. Making sure to not overmix the batter.
    • Pour the cupcake mixture into the prepared muffin pan and place into the oven to bake for 10-15 minutes or until a cake tester comes out clean.
    • Remove the cupcakes from the oven, allowing them to cool in the pan on a baking rack for five minutes before removing the cupcakes to cool completely.

    Frosting

    • In a medium bowl and electric mixer, add the butter, powdered sugar, tequila, and vanilla extract. Be sure to mix on low speed until the frosting comes together and is smooth.
    • Gently pipe or spoon the frosting on top of the cooled cupcakes. Decorate them as desired.
    • Serve and enjoy with family and friends!
