- 300 g all-purpose flour sifted
- 1 tbsp baking powder
- ¼ tsp kosher salt
- 200 g unsalted butter cold, cut into small cubes
- 150 g icing sugar sifted
- 1 tsp vanilla extract
- 1 large egg plus 1 lightly beaten egg white for brushing
- ½ cup almonds roughly chopped
Let's Begin!
In a large bowl, mix the flour, baking powder, and salt together. Add the butter and rub in with your fingers until the mixture resembles coarse crumbs. Mix in the icing sugar and vanilla extract, then add the whole egg and mix until just combined. Be careful not to overmix.
Wrap the dough in plastic wrap and put it in the fridge to chill for about 1 hour. Preheat the oven to 350°F.
Roll the chilled dough into about 40 even balls (around 15g each). Arrange the dough balls over two baking sheets lined with baking parchment, leaving space between each for spreading.
Using the back of a fork, press the balls down gently in the middle, so they spread a little bit.
Brush the cookies with the beaten egg white and sprinkle over the chopped almonds. Bake for 10 mins, or until just cooked through (the cookies should not be fully browned, just lightly golden at the edges).
Remove from the oven and transfer to wire racks to cool completely.
