Strawberry Banana Muffins

- 2 tsp baking powder
- ½ tsp kosher salt
- 2 medium bananas mashed
- 1 large egg
- ¼ cup whole milk
- ¼ cup unsalted butter melted
- 1 cup light brown sugar packed
- 1 tsp vanilla extract
- 1½ cups strawberries roughly chopped

- Preheat oven to 350°F. Prepare the muffin pan by spraying nonstick cooking spray or brushing with melted butter. Or if preferred, use muffin liners. Set aside.
- In a medium bowl, whisk the flour, baking powder, and salt together. Set aside.
- In a large mixing bowl, whisk together the mashed bananas, egg, milk, melted butter, sugar, and vanilla until smooth.
- Add the dry ingredients (in half batches) to the wet ingredients and gently fold just until no dry spots remain. Be careful not to overmix.
- Fold in the strawberries, then fill the prepared muffin tin until the batter reaches about ¼ inch from the top.
- Top with more strawberries and a sprinkle of sugar, if desired.
- Bake for 18 to 20 minutes, or until set in the middle.
- Cool slightly before removing from the muffin tin.
