Air Fryer Gluten-Free Pumpkin Banana Nut Bread
Good news! No need to use the oven, just the air fryer! This air fryer pumpkin banana nut bread is made with fresh ripe banana, pumpkin, and walnuts or pecans. Top them with icing, cream cheese, or even butter. this will become your favorite autumn bread. The best thing about this bread it is gluten-free, a healthy treat for everyone! Enjoy them for breakfast alongside coffee or soup!

Gluten-free Bread:
- 2 medium banana ripe
- 1 cup pumpkin canned or fresh
- 1/2 cup maple syrup pure
- 2 medium eggs or use your vegan egg substitute
- 2 cup old-fashioned oats
- 1 tsp vanilla extract pure
- 1 tsp cinnamon ground
- 1 tsp nutmeg ground
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup walnuts or pecans, diced
Icing (Optional)
- 1 cup sugar powdered, or raw sugar
- 2-3 tbsp milk or water, plant-based ,milk
Fluffy and Moist Bread:
Set the air fryer to 320F and grease the mini loaf pan.
Bake them for at least 15-20 minutes or until the toothpick comes out clean. Allow cooling of the bread.
Slice and serve with butter or cream cheese on top.
Optional but a great addition:
In a mixing bowl, mix all the icing ingredients till smooth.
Drizzle the icing mixture into the slightly cool bread or top with cream cheese or butter, if preferred.
Slice, serve, and enjoy with coffee or soup!
Ingredients Note
- You can use homemade pumpkin or if you prefer to buy, check if it is canned pumpkin, not pumpkin filling, as they are naturally sweetened and your bread will become too sweet.
- Measure accurately the old-fashioned oats to cook the bread quickly.
Recipe Note
- Use a mini loaf pan to ensure that the middle of the bread is fully cooked.
- For the leftovers, wrap them with plastic wrap for one week.
