Dough

  • 1 cup water lukewarm
  • cups whole milk lukewarm
  • ½ ounce active dry yeast
  • 3 eggs fresh
  • ½ cup granulated sugar
  • 1 tsp kosher salt
  • ½ cup unsalted butter softened
  • 1 cup raisins
  • 8 cups all-purpose flour

Filling

  • 2 tbsp milk
  • 1 cup light brown sugar
  • 3 tbsp cinnamon ground
  • 2 tbsp unsalted butter melted

Let's Begin!

    Dough

    • Dissolve the yeast in lukewarm water, then set aside until frothy.
    • In a large bowl, beat together the eggs, sugar, butter, salt, milk, and activated yeast mixture. Then slowly add the lukewarm milk.
    • Gradually add the flour to the mixture to make a stiff dough, then add in the raisins.
    • Knead the dough on a lightly floured surface for a few minutes until smooth.
    • Place the dough back in the used large mixing bowl, but make sure to butter the bowl first. Cover with a warm, damp cloth and let rise until doubled, usually about 1 1/2 hours.

    Let's Assemble!

    • Roll out the dough on a lightly floured surface into a large rectangle ½ inch thick.
    • In a small bowl, mix together the sugar and cinnamon until well combined.
    • Brush the milk onto the dough, then sprinkle the sugar mixture on top.
    • Roll up the dough tightly. The roll should be about 3 inches in diameter.
    • Cut into thirds, then tuck under ends and pinch the bottom together.

    Let's Bake!

    • Place loaves into well-greased 9 x 5-inch pans and lightly grease the tops of the loaves. Let rise in a warm place, uncovered, again for about an hour.
    • Preheat oven to 350°F while proofing the loaves.
    • Bake for 45 minutes or until the loaves are lightly browned and sound hollow when tapped.
    • Remove from oven and let cool on a rack. Brush the loaves with melted butter.
    • After about 20 minutes, lay loaves on their sides and remove them from the pans.
    • Allow the loaves to cool before slicing.
