Crunch Bar Candy

These bars remind me of the candy my Mom and I often shared when I was a child- the Nestle Crunch Bar. By making my own now, I can adjust the type of chocolate and often use dark chocolate (over 70% cocoa) instead of milk chocolate. That crunch is still there!

Ingredients
  

  • 24 ounces chocolate chips dark or milk chocolate, your choice
  • cups crispy rice cereal such as Rice Krispies or other brand

Instructions
 

  • Line a 9 x 13-inch pan with parchment paper. Or use a silicone mold pan. Apply a light coating of grease or spray.
  • Add one half the chips to the top section of a double boiler. You may use a glass bowl over a pot of water, if you don't have a double boiler.
  • Stir until they are all melted.
  • Add half the remaining chips and continue stirring to melt them.
  • Remove the bowl holding the melted chips. Set it on a potholder to maintain the heat.
  • Add the remaining chips and stir vigorously until they are completely melted.
  • Gently mix the rice cereal into the chocolate.
  • Pour the mixture into your prepared pan or silicone mold. Cover with a piece of parchment paper and carefully level. I find that using a flat-bottom pan works well for this.
  • Refrigerate until firm, about 30 minutes.
  • When firm, cut into desired size bars. In the 9x13 pan, you can make king-size bars by cutting in half widthwise, then cut twice lengthwise.

Notes

While many enjoy these bars as candy, you might use them as a base for cookies (see our Nestle Crunch Oatmeal Cookies) or add dried fruit to help increase the health component.
