Scones

  • 2 cups all-purpose flour
  • ½ cup light brown sugar
  • 1 tbsp baking powder
  • ½ tsp kosher salt
  • 1 cup rhubarb fresh, diced
  • cup heavy whipping cream

Topping

  • 1 tbsp light brown sugar
  • 3 tbsp unsalted butter melted

Instructions
 

Let's Begin!

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • In a large bowl, mix in flour, sugar, baking powder, and salt. Stir in the diced rhubarb.
  • Add the cream and stir just until dough forms. Knead gently in the bowl just until the dough holds together. *do not over mix
  • Form the dough into a 10-inch diameter circle, ¾ inch thick, on the prepared baking sheet. Cut the dough into 8 wedges and spread scones 2 inches apart from one another.
  • Sprinkle the scones with 1 tbsp of sugar.
  • Bake the scones for 20-25 minutes or until very light golden brown, *Do NOT over-bake or they will dry out.
  • Brush with melted butter and serve warm.
  • Enjoy with family and friends!
