  • 2 cups rice flour
  • ½ cup glutinous rice flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • ¾ cup brown sugar
  • cup unsalted butter melted
  • cups coconut cream or full fat coconut milk
  • 3 eggs lightly beaten
  • 1 banana leaf (optional)
  • 1 salted duck egg sliced (optional)
  • ½ cup grated coconut for topping (optional)
  • 1 cup cheddar cheese grated

Instructions
 

Let's Begin!

  • Firstly, Preheat oven to 350°F.
  • In a large bowl, mix together the rice flours, baking powder, sugar, and salt until well combined.
  • Add in melted butter, coconut cream, and eggs. Whisk until smooth.
  • If using banana leaves, make sure to wash and dry before using. If not, Parchment paper works fine. Line a 9-inch cast-iron skillet with it. (Make sure there are no gaps).
  • Butter the leaf or parchment generously, and trim edges leaving a 1- to 2-inch overhang.
  • Pour mixture into the prepared skillet and bake for 15 minutes. Remove from oven and top with salted egg and cheese.
  • Return the skillet to the oven until the coconut rice cake is golden brown on top, 20 to 25 minutes more.
  • Brush with more melted butter and sprinkle with grated coconut, if desired.
  • Serve warm and enjoy with family and friends!
