Harvest Apple Cranberry Cake

Toppings:
- 1 tbsp butter melted, (see notes for vegan substitute)
- 12 oz. cranberries fresh or frozen
- 8 oz. apple peeled and diced, fresh or frozen
- 2 oz. sugar granulated
Cake:
- 1-2 cups all-purpose flour to make it gluten-free, look for certified gluten-free flour
- 1/2 tsp kosher salt
- 1 tbsp baking powder
- 1 tsp cinnamon ground
- 5 oz. sugar granulated
- 5 oz. apple sauce unsweetened
- 7 tbsp butter melted
- 2 large eggs
- 1 tsp vanilla extract pure
Bake and have fun!
Preheat the oven to 350F and grease a square or round pan.
In a large mixing bowl, stir together the cake ingredients until everything is incorporated.
Pour the batter into the prepared pan and top with the diced apples and cranberries, dust with sugar, and drizzle with melted butter.
Bake for 40-45 minutes or until the toothpick comes out clean.
Serve with whipped cream, if desired.
Vegan Substitution-optional!
- Eggs: Flax seeds are the most commonly used vegan egg substitute.
- Butter: Look for non-dairy or dairy-free products they are also available in the supermarket.
- Sugar: Simply substitute raw, or organic sugar.
