Donuts

  • 2 large eggs
  • 1 cup ricotta cheese
  • 1 tsp vanilla extract
  • ¼ cup light brown sugar
  • 1 tsp orange zest finely grated
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • ¼ tsp nutmeg ground

Orange-sugar Coating

  • ½ cup granulated sugar
  • 1 tsp orange zest finely grated

Let's Begin!

  • Fill a medium pot fitted with a deep-fry thermometer with equal parts olive oil and vegetable oil to a depth of about 2 inches. Heat over medium heat until the thermometer registers 350ºF.
  • In a medium bowl, whisk the eggs, ricotta, vanilla, light brown sugar, and orange zest until smooth. Sift in the flour, baking powder, salt, and nutmeg and whisk until smooth.
  • For the orange coating, combine the granulated sugar and orange zest In a shallow bowl. Using your fingers, work the zest into the sugar until evenly incorporated. Set aside.
  • Working in batches, using a 1-ounce scoop, drop the batter into oil. Fry, turning occasionally, until golden brown, about 4 minutes per batch.
  • Using a slotted spoon or spider, transfer the zeppole to a plate lined with paper towel to drain briefly.
  • Transfer the donuts to the orange-sugar coating and roll to coat.
