- 1 ⅓ cup butter softened
- 1 cup light brown sugar
- ½ tsp kosher salt
- 1 extra large egg fresh
- 1 tbsp almond extract
- 2 cups all-purpose flour
- 2 cups almond flour
- 1 tsp lemon zest
- 1/2 cup raspberry preserves
- 1/2 cup raspberry fresh
- 1 cup almond flakes
Let's begin!
Preheat oven to 350°F.
In a large bowl, using an electric mixer, cream the butter and sugar until light and fluffy.
Beat in egg and lemon zest.
Stir in the flour, almond flour, and salt.
Spread 2 cups of dough onto a parchment-lined 13x9 brownie pan.
Spread the raspberry preserves and fresh raspberries.
Crumble the remaining cookie dough and almond flakes on top.
Bake at 350 degrees for 40 minutes until golden brown on top.
Cool completely, then cut into 2-inch or 3-inch bars.
Sprinkle with powdered sugar.
Serve and enjoy with family and friends!
Pro Tips!
Always use fresh lemon zest. Orange zest can also be substituted.
All-natural jams and sugar-free work fine.
Make the layers thin for thinner bar cookies.
Don't overcook. Cooking these longer will make the bar cookies crunchier.
Store leftovers in the refrigerator.
These bars freeze well for 3 months.
