Steamed Rice Cake Muffins with Cheese

Let's gather the ingredients!
- ½ cup rice flour sifted
- ½ cup all-purpose sifted
- ½ cup granulated sugar
- 2 tsp baking powder
- 1 large egg
- ½ cup evaporated milk
- ¼ cup coconut milk
- 1 tbsp unsalted butter melted
- 1 tsp vanilla extract
- ¼ cup cheddar cheese grated
- 12 strips cheddar cheese for topping
- 2 tsp Ube flavoring extract OPTIONAL
- melted butter for brushing the molds
Let's Begin!
In a large mixing bowl, combine both the flours, sugar, and baking powder.
In another bowl, whisk together the evaporated milk, coconut milk, egg, butter, and vanilla extract until all combined.
Gradually pour the wet ingredients over the dry ingredients while mixing with a whisk. If you prefer, add in the ube flavoring extract.
Add the grated cheese and fold slowly using a spatula or spoon.
Let's start steaming!
Grease each puto molds or small muffin molds with butter, then fill the molds with batter up to ¾ full.
Fill the bottom of the steamer with water and bring to a gentle simmer over very low heat. Place the molds in the steamer basket and steam for about 10 to 12 minutes or until toothpick inserted comes out clean.
Remove the lid and add a strip of cheese on top of each put. Steam for another minute or two until cheese melts. Turn off heat and let it rest until slightly cooled down.
Remove the cooked Puto Cheese from the molds and transfer to a serving plate.
