- ¾ cup sweet potato puree
- 1 cup nut butter
- 1 tsp vanilla extract
- 6 tbsp all-purpose flour
- ½ cup dark chocolate chips mini, vegan
- ⅔ cup light brown sugar
- 6 tbsp cocoa powder
- 1½ tsp baking soda
- ⅛ tsp kosher salt
Let's Begin!
Preheat oven to 325°F. Then line an 8x8 baking pan with parchment paper.
In a large bowl, whisk together the sweet potato puree and nut butter until smooth.
Add vanilla, sugar, salt, flour, cocoa powder, and baking soda. Mix until well combined, then stir in the chocolate chips.
Smooth the batter into the prepared baking sheet, then use a second parchment paper to smooth the top.
Bake for 20-25 minutes, they should look underdone when you take them out. The brownies will firm up once they cool.
