Make sweet potato pie!
Refrigerate the flour and butter first for 25-30 minutes before making the crust.
In a food processor, pulse to combine the flour, sugar, and salt. Then add the butter, apple cider, and ice water until the dough forms.
On a floured surface, form the dough into a ball and flatten it into a disc. Be sure that there are no signs of cracks.
Refrigerate the dough with plastic wrap and cover for at least 3 hours, or even overnight, if desired.
Preheat the oven to 425°F and grease the pie dish.
Roll out the dough on a floured area, then transfer it into a pie dish and flatten like a disc or to form a pie crust (see the picture). Place for 10-15 minutes in the freezer.
Once chilled, bake the crust for at least 10–15 minutes or until the crust is completely baked.
Meanwhile, in a mixing bowl, stir to combine the sweet potato puree, condensed milk, eggs, vanilla extract, spices, and salt until smooth.
Over a baked crust, gently pour the sweet potato mixture and bake for 1 hour and 10 minutes, or until the pie becomes golden.
Served topped with whipped cream or marshmallow, if preferred.
