Let's gather the ingredients!
- 7 ounces vegan butter softened
- 4½ ounces confectioner's sugar sifted
- 11 ounces all-purpose flour sifted
- 1 tbsp cornstarch
- 1 tbsp almond milk
- 2 tsp vanilla extract
- ½ tsp almond extract
- 2 tbsp granulated sugar for garnish
Let's begin!
Preheat oven to 350°F. Line a baking sheet with parchment paper, then set aside.
In a large bowl, whip together the vegan butter and confectioner's sugar to create a soft buttercream.
Add the flour, cornstarch, almond milk, vanilla extract, and almond extract. Mix until just combined.
Turn the dough on a lightly floured surface, then flatten the dough ½-inch thick.
Using a 2-inch cookie cutter, cut out circles until all the dough is used. transfer them on the prepared baking sheet.
Bake the cookies for 10-15 minutes, regularly checking to make sure they are baking evenly. Turn your baking sheet around to face the other way half way through, if necessary.
After baking, let them cool on a cooling rack then sprinkle with sugar on top.
