Sponge

  • 1 cup dates pitted, chopped
  • 1 cup almond milk unsweetened
  • cup soda water
  • 1 tsp baking soda
  • ½ cup vegan butter
  • ½ cup brown sugar
  • cups self-rising flour

Toffee Sauce

  • ¼ cup maple syrup
  • cups brown sugar
  • cups vegan butter
  • ¼ tsp kosher salt

Let's Begin!

    Sponge

    • Preheat the oven to 375°F. Grease a 10 x 10 baking pan with coconut oil. Set aside.
    • In a saucepan over medium heat, add the dates, milk, and soda water. Simmer until the dates are softened.
    • Remove the pan from the heat and add the baking soda. Mix well and let cool.
    • In a mixing bowl, beat the sugar and vegan butter until smooth and creamy. Slowly add the date mixture and mix well. Gently add the flour until fully combined. Transfer the pudding mixture to the prepared baking pan.
    • Bake for 20-25 minutes, until a skewer poked in the middle comes out clean.

    Toffee Sauce

    • In a saucepan over medium heat, add the syrup, sugar, vegan butter, and salt, and let simmer for 5 minutes until thick and gooey.
    • Poke holes over the top of the pudding and pour half the sauce over, to soak the pudding.
    • Serve and pour more toffee sauce over each serving.
