  • 1 cup almond milk or other plant-based milk
  • 1 cup orange juice preferably freshly squeezed
  • ½ cup Date Paste
  • 2 tbsp flaxseed
  • 2 tbsp whole-wheat flour
  • 1 tsp orange zest
  • 1 tsp cinnamon ground
  • ½ tsp ginger ground
  • 8 ounces whole wheat bread cut into ¾-inch cubes
  • 1 cup cranberries coarsely chopped
  • 1-2 pears chopped

Orange Sauce

  • 6 ounces silken tofu extra-firm
  • 2 tbsp maple syrup
  • ½ tsp orange zest
  • 1 tbsp orange juice preferably freshly squeezed
  • ½ tsp vanilla extract
  • 1 pinch kosher salt or to taste
  • 1-3 tbsp almond milk

Instructions
 

Let's Begin!

    Bread Pudding

    • Preheat oven to 350°F.
    • In a large bowl combine the almond milk, orange juice, date paste, flaxseed, flour, orange zest, cinnamon, and ginger.
    • Let rest for 5 minutes, then add the bread cubes, cranberries, and pears. Mix well.
    • Pour into an 8-inch square nonstick or silicone baking pan. Bake for 25 to 30 minutes or until the top is golden-brown and firm to the touch.
    • Transfer finished bread pudding to a wire rack; cool for 10 minutes.

    Orange Sauce

    • Combine the tofu, maple syrup, orange zest, orange juice, vanilla extract, and salt in a blender. Cover and blend until smooth.
    • Add the almond milk 1 tablespoon at a time, until you reach drizzling consistency. Refrigerate until ready to serve.
    • Cut pudding into squares and spoon Orange Sauce over warm pudding just before serving.
