These Blueberry Crumble Bars are amazingly easy to make and yummy! Packed with a generous layer of jammy blueberries between a buttery cookie base and irresistible golden brown crumb. They’re surely a hit!
BLUEBERRY FILLING
- 2 cups blueberries (fresh, *you can use frozen but blot dry)
- ¼ cup white sugar
- 1 tbsp lemon zest (freshly grated)
- 2 tsp cornstarch
- 1 tbsp lemon juice (freshly squeezed)
- ¼ tsp allspice (or cinnamon)
COOKIE CRUST
- 1 ¼ cup all-purpose flour
- ½ cup white sugar
- 1 stick butter (softened)
- ½ tsp baking powder
- 1 egg yolk (fresh)
RESERVED DOUGH (Crumble Topping)
- 1 cup reserved dough from the above recipe
- 2 tbsp brown sugar
