These Blueberry Crumble Bars are amazingly easy to make and yummy! Packed with a generous layer of jammy blueberries between a buttery cookie base and irresistible golden brown crumb. They're surely a hit!

  • 2 cups blueberries fresh, *you can use frozen but blot dry
  • ¼ cup white sugar
  • 1 tbsp lemon zest freshly grated
  • 2 tsp cornstarch
  • 1 tbsp lemon juice freshly squeezed
  • ¼ tsp allspice or cinnamon


  • 1 ¼ cup all-purpose flour
  • ½ cup white sugar
  • 1 stick butter softened
  • ½ tsp baking powder
  • 1 egg yolk fresh

RESERVED DOUGH (Crumble topping)

  • 1 cup reserved dough from the above recipe
  • 2 tbsp brown sugar


Time to make 'em!

  • Preheat the oven to 375°F.
  • Prepare a 9 x 9 brownie pan and line it with parchment paper. Set aside.
  • Mix the butter, sugar, flour, baking powder, and egg yolk together with a pastry blender or fork, saving around 1 cup of dough for the top.
  • Press 2/3 of the dough into the prepared 9 x 9 square pan.
  • In the bowl with the reserved dough saved, knead the 2 tablespoons of brown sugar evenly into the dough.
  • Pour the blueberry filling mixture on top of the dough-lined pan.
  • Top with the remaining dough, adding little pieces evenly, then place in the preheated oven.
  • Bake for around 35 to 45 minutes depending on the size pan or until golden brown on top.
  • Cool completely, then cut into 3-inch bars.
  • I store any leftovers in a covered plastic container in the refrigerator and let them come to room temperature.



Reserve some dough for the crumble topping.
Blot blueberries dry after washing.
Use a fork or pastry blender to blend the dough.
Always use fresh lemon zest. orange zest can also be substituted.
The crumble topping the day after will be softer but still delicious.
Store leftovers in the refrigerator or freezer.
These bars freeze well for 3 months.
