Lemon Blueberry Sweet Rolls
Ingredients

Rolls
- 2¾ cups all-purpose flour
- 3 tbsp granulated sugar
- 1 tsp kosher salt
- 1 packet instant yeast
- ½ cup water
- ¼ cup milk
- 2½ tbsp unsalted butter
- 1 large egg
Filling
- 1½ cups blueberries frozen, not thawed
- ¼ cup granulated sugar
- 1 tsp cornstarch
- 1 tsp lemon zest
Glaze
- 1 lemon zest and juice
- 1 cup confectioner's sugar
- ½ tsp vanilla extract
- 1½ tbsp milk
Instructions
Let's Begin!
Filling
- Combine the frozen blueberries, sugar, and cornstarch in a medium bowl. Gently toss it around and let sit. Set aside.
Dough
- Set aside 1/2 cup of flour. In a large bowl, toss the remaining flour, sugar, salt, and yeast together. Set aside.
- Heat the water, milk, and butter together in the microwave until the butter is melted and the mixture is warm to the touch. Stir the butter mixture into the flour mixture. Add the egg and only enough of the reserved flour to make a soft dough.

- Garnish with more lemon zest on top, if desired.
