For the Crust

  • 1 cup brown sugar packed
  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • ¾ cup unsalted butter cold, cut into small cubes
  • 2 tsp cinnamon ground

For the Filling

  • 3 cups strawberries fresh or frozen, cut into small dices
  • 3 cups rhubarb fresh or frozen, cut into small dices
  • 1 tsp vanilla extract
  • ½ tsp lemon zest
  • ¼ tsp kosher salt
  • ¼ cup corn starch
  • ½ cup granulated sugar

Instructions
 

Let's Begin!

  • Firstly, Preheat the oven to 350 °F and line a 9×13” pan with parchment paper, lightly greased. Set aside.
  • In a large bowl, combine brown sugar, cinnamon, oats and flour until well blended. Add the cold butter and mix with a pastry cutter or your hands until combined.
  • Press the dough into the bottom of the prepared pan, covering the bottom entirely. Save 1 cup of dough for crumble. Bake bottom crust for 10-20 minutes, until dry and golden.
  • In a medium bowl, combine the strawberries, rhubarb, corn starch, vanilla extract, lemon zest, salt, and sugar. Spread on top of crust, and crumble the remaining oat mixture on top.
  • Bake for 45-50 minutes, until filling is thickened and bubbling and crumble is golden.
  • Cool completely before cutting. Cut into 3-inch bars.
  • Serve and enjoy with family and friends!
