These Chocolate Chip Oatmeal Pumpkin Spice Bars are the perfect cozy fall-inspired bars. Perfect as a snack or for breakfast. The pumpkin filling in these delectable bars are spiced with ginger, cinnamon, allspice, and other typical "pumpkin pie" spices, mixed with bitter-sweet chocolate chips, making for an absolute fall treat.

Ingredients

  • 1 ½ cup rolled oats
  • 1 can pumpkin puree 15 oz
  • 2 large eggs fresh
  • 1 can evaporated milk 12 oz
  • ¾ cup light brown sugar
  • 1 tsp cinnamon ground
  • ½ tsp kosher salt
  • ½ tsp ginger fresh, grated
  • ¼ tsp allspice ground
  • ½ cup bittersweet chocolate chips

Make either one of these crusts below:

Crust #1 - without nuts

  • ½ cup rolled oats
  • 1 cup all-purpose flour
  • ½ cup packed brown sugar
  • ½ cup butter softened

Crust #2 - with nuts and coconut

  • 1 cup rolled oats
  • ½ cup butter softened
  • 1 cup all-purpose flour
  • ½ tsp kosher salt
  • 1 tsp baking powder
  • ½ cup dried coconut flakes
  • 1 tsp vanilla extract
  • ½ cup light brown sugar
  • ½ cup pecans chopped

Instructions
 

Let's Begin!

  • Preheat the oven to 350°F.
  • Press the crust mixture onto a parchment-lined 9 x 13 brownie pan, and bake the crust for 7 minutes at 350°F.
  • Whisk and combine the rolled oats, pumpkin, chocolate chip, evaporated milk, eggs, sugar, cinnamon, salt, ginger, and allspice. Mix until the mixture is thoroughly blended together.
  • Pour the filling over the hot semi-baked crust and continue to bake for 25 to 30 until the middle is set.
  • Remove from the oven and cool completely.
  • Refrigerate until completely cooled. Once cool, cut into squares.
  • Serve and enjoy with family and friends!

Notes

PRO TIPS

If using fresh pumpkins, make sure you drain it well.
Use either bittersweet or dark chocolate chips to give a different depth of flavor.
Add an extra amount of spice if you love cinnamon increase up to 1/2 teaspoon more.
Parchment paper works best however a buttered pan gives a crunchier bottom.
Use two separate pans if you have a small family and freeze one for later.
Store leftovers in the refrigerator.
These bars freeze well for 3 months.
