  • 1 cup confectioner's sugar
  • 2 cups olive oil
  • ½ cup Cognac
  • ½ cup orange juice
  • 1 tbsp honey
  • 7 ½ cups all-purpose flour
  • 4 tsp orange zest grated
  • 3 tsp baking powder
  • 1 tsp cinnamon ground
  • ½ cup walnuts toasted, ground

Syrup

  • 1 cup light brown sugar
  • 1 cup water
  • ¾ cup honey
  • ½ tsp cinnamon ground

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper then set aside.
  • In a saucepan, combine sugar, water, cinnamon, and honey, then bring to a boil. Reduce heat to a simmer, uncovered for 10 minutes, then cool completely. Set aside.
  • Beat together the confectioners' sugar and oil in a mixing bowl until well blended. Mix in Cognac, orange juice, and honey.
  • In another bowl, whisk flour, orange zest, baking powder, and cinnamon. Gradually incorporate the sugar mixture.
  • Shape tablespoons of dough into 1-inch thick ovals. Place 1 inch apart on the prepared baking sheet.
  • Bake for 20-25 minutes until lightly browned. Cool on pans for 5 minutes, then transfer cookies to wire racks.
  • Float and turn the warm cookies in the syrup for about 10 seconds, then allow the excess to drip off.
  • Place cookies on wax paper, then sprinkle with walnuts. Let cool to set.
