Christmas is just around the corner, and that means it’s time to start thinking about holiday baking! One of my favorite traditions is making shortbread cookies with my family. We always have a lot of fun mixing the dough, rolling it out, and using cookie cutters to create all sorts of festive shapes. But the best part is decorating the cookies with colorful frosting and sprinkles. Of course, no shortbread cookie would be complete without a few nuts on top. I always use chopped peanuts and hazelnuts, but you can use any type of nut that you like. Just make sure to add them before you bake the cookies so that they stick. And there you have it: a delicious Christmas treat that’s perfect for sharing with friends and family!

Best Baking Tips; Let’s make it Gluten-Free and Vegan!

Traditional shortbread cookies are made with wheat flour, butter, and sugar. Unfortunately for those with gluten sensitivities or who are vegan, this classic recipe is off-limits. However, there are several easy substitutes that can be used to make a delicious batch of gluten-free and vegan Christmas shortbread cookies. Almond flour makes an excellent replacement for wheat flour,  and coconut oil can be used in place of butter. I love the way the almond flour gives the cookies a nutty flavor, while the coconut oil keeps them nice and moist. Best of all, these substitutes are easily available at most supermarkets. So why not give them a try? Your friends and family will be sure to love your delicious Christmas cookies!
