Hanukkah Jelly-Filled Donuts (Sufganiyah): A Delicious Jewish Tradition!

Hanukkah jelly-filled donuts, known as Sufganiyah in Hebrew, are a delicious treat that has a unique place in Jewish culture. These sweet treats are usually round with a soft and light texture on the inside, created by frying the dough, then filling it with jam or jelly on the inside.

It’s no wonder why these fried goodies have become a beloved holiday favorite for many celebrating Hanukkah! They symbolize the traditional custom of eating fried foods during this time of celebration to commemorate the miracle of oil lasting eight days long. Best Baking Tips; Pro-Tips!

The celebration of Hanukkah wouldn’t be complete without delicious Jelly-Filled Donuts, or Sufganiyah. Making the perfect treat does not have to be challenging, however. All it takes is careful preparation and attention to detail for a tasty result.

Start with using the right type of flour; all-purpose flour is the better option compared to plain white flour.

Secondly, when adding yeast to the dough, make sure it doesn’t get too hot before adding your wet ingredients so that the dough rises correctly and evenly.

After allowing the dough to rise for about an hour and a half, begin the frying process! When you are ready to fry the doughnuts use oil that can withstand high temperatures, this will help create a delicious golden brown color.

Make sure that all donut sides are equally cooked and golden in color, as any undercooked or burned bits can make all donuts taste bad. Once removed from the oil, pat them down with a paper towel to absorb excess grease.

The final step: inject each donut with jelly filling! Fill each one until they look like Julia Roberts’ smile -all beautiful and plump!

  • 4 tbsp granulated sugar
  • 2 tsp active dry yeast
  • 3 ⅔ cups all-purpose flour plus more for dusting
  • ¼ cup unsalted butter melted
  • 2 large eggs
  • 4 tsp vanilla extract
  • 1 tsp kosher salt

Filling and dusting

  • 1 cup strawberry jam seedless or strained
  • ½ cup powdered sugar

Frying

  • cooking oil

Instructions

Let's Begin!

    Dough

    • In a small bowl, whisk together the water, yeast, and sugar, then set aside until foamy.
    • In the bowl of a stand mixer fitted with a dough hook, combine the yeast mixture, flour, butter, eggs, vanilla extract, and salt. Blend together on low for 15 minutes.
    • Place the kneaded dough in a lightly greased bowl, then cover it with plastic wrap until the dough has doubled in size. About 1-2 hours.
    • Once the dough has doubled in size, line a baking sheet with parchment, and dust the parchment and a work surface with flour.
    • Turn the dough out on the floured surface, then gently flatten the dough to a 1/2-inch thickness.
    • Using a 2½-inch round cutter, cut as many circles as you can, then place them on the prepared baking sheet. Reroll any scraps until all dough is used and shaped
    • Dust the cut circles of dough with a little more flour, cover with plastic wrap and let rise again for about an hour.

    Let's fry and fill!

    • Fill a deep pot with cooking oil, then over medium-low heat until it reaches 325°F.
    • Fry 3-4 doughnuts at a time for 2-3 minutes, or until it is golden in color. Carefully flip and fry the other side for another minute or two, until golden.
    • Lift the doughnuts out of the oil and let them drain on the prepared wire rack. Repeat with the remaining doughnuts.
    • Once the doughnuts are cool, poke a hole in the side or top of the doughnut with a straw or skewer.
    • Place the strained jam into a piping bag fitted with a small plain tip. Squeeze a small amount of jam into each doughnut and then dust the doughnuts with powdered sugar.
    • Serve and enjoy with family and friends!
