Christmas Shortbread Cookies with Nuts
Ingredients

- 1 cup unsalted butter softened
- ⅔ cup granulated sugar
- 2 cup all-purpose flour
- ½ tsp almond extract
- ½ tsp salt
- 1 egg yolk fresh
- 1 tbsp water
- ¼ cup peanut finely chopped
- ¼ cup hazelnut finely chopped
Instructions
Let's Begin!
- Firstly, Preheat oven to 325°F.
- Line a sheet pan with parchment paper. Set aside.
- In the bowl of a stand mixer, combine the butter and sugar. Beat on high until light and fluffy.
- Then, Add the almond extract and salt.
- Add ½ of the flour, and mix until just combined.
- Add the remaining flour , and mix until the dough just holds together.
- flatten the dough using a rolling pin, about ⅓ inch thick. Cut out the dough with cookie cutters of any preferred design.
- In a small bowl, Mix together the egg yolk and water, set aside for brushing.
- Next, place the cut out cookies in the prepared baking sheet, Brush with egg mixture, Then sprinkle with chopped peanuts and hazelnuts.
- Bake for 20-25 minutes, or until golden brown on the edges.
- Cool completely, then remove from the baking sheet.
Serve, and enjoy with family and friends!
