Ingredients

- ¼ cup unsalted butter melted
- ¾ cup granulated sugar
- ½ tsp kosher salt
- ½ tsp cinnamon ground
- ½ cup water lukewarm
- ½ cup evaporated milk
- 1 package active dry yeast
- 1 large egg
- 3½ cups all-purpose flour
- 1 cup powdered sugar
- vegetable oil for frying
- berries and whipped cream optional, for topping
Instructions
Let's Begin!
Dough
- In a small bowl, add 2 tbsp of lukewarm water, yeast, and 1 tsp of sugar. Set aside until frothy.
- In another bowl, beat the butter, remaining sugar, salt, and cinnamon until crumbly. Add the remaining lukewarm water and evaporated milk. Beat until fully combined.
- Add 2 cups flour, then mix and knead until well blended and elastic. Stir in enough remaining flour to form a soft and lightly sticky dough.
- Place the dough in a greased bowl, turning once to grease the top. then cover with plastic wrap. Refrigerate for 4 hours or overnight to proof.
- Bring dough to room temperature. On a floured surface, roll the dough into a 16x12-inch rectangle. Cut into 2-in. squares.
Let's Fry!
- In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°F. Then Drop beignets, a few at a time, into the hot oil.
- Fry until golden brown, about 1 minute per side. Drain on paper towels.
- Dust with confectioners' sugar. If desired, serve with assorted berries and whipped topping.
