Green Tea Matcha Mousse Cake
Ingredients

- 10 ounces graham crackers ground
- ¼ cup coconut oil melted
- 3 tbsp light brown sugar
- ¼ tsp kosher salt
- 5 tsp almond milk or other plant based-milk
Mousse
- 8 ounces cashews raw
- 1-2 cups coconut milk
- 4 ounces confectioner's sugar plus 4 tsp
- 4 tbsp coconut oil melted
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- ½ tsp kosher salt
- 14 ounces almond milk or other plant based-milk
- 1½ tbsp agar powder
- 2 tbsp matcha powder plus more for dusting
Instructions
Let's Begin!
- In a large mixing bowl, combine the ground graham crackers, coconut oil, sugar, salt, and almond milk.
- Press the mixture into the bottom of a 10-inch springform pan.
- Bake for 15 minutes until lightly browned. Set aside to cool completely.
- To make the base for this mousse, blend together the cashews, coconut milk, sugar, coconut oil, lemon juice, vanilla, and salt in a blender.
- In a small saucepan, combine the almond milk and agar powder. Allow for a 2-minute simmer while whisking.
