  • 3 tbsp light brown sugar
  • ¼ tsp kosher salt
  • 5 tsp almond milk or other plant based-milk

Mousse

  • 8 ounces cashews raw
  • 1-2 cups coconut milk
  • 4 ounces confectioner's sugar plus 4 tsp
  • 4 tbsp coconut oil melted
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • ½ tsp kosher salt
  • 14 ounces almond milk or other plant based-milk
  • tbsp agar powder
  • 2 tbsp matcha powder plus more for dusting

Instructions
 

Let's Begin!

  • In a large mixing bowl, combine the ground graham crackers, coconut oil, sugar, salt, and almond milk.
  • Press the mixture into the bottom of a 10-inch springform pan.
  • Bake for 15 minutes until lightly browned. Set aside to cool completely.
  • To make the base for this mousse, blend together the cashews, coconut milk, sugar, coconut oil, lemon juice, vanilla, and salt in a blender.
  • In a small saucepan, combine the almond milk and agar powder. Allow for a 2-minute simmer while whisking.
  • Blend in the cashew mixture and matcha powder until well combined, adding more matcha if desired.
  • In a mixing bowl, combine all of the ingredients for this recipe; set aside to cool, then refrigerate for 5-6 hours or overnight.
  • Serve with a light dusting of matcha powder, and if desired, top with fresh fruits or berries.
