Cake
- 4 large eggs separated
- ⅔ cups granulated sugar divided
- ⅔ cups cake flour sifted
- ½ tsp kosher salt
- ¾ cup evaporated milk
- ½ cup heavy whipping cream
- ¾ cup sweetened condensed milk
- 2 tsp vanilla extract
- ¼ tsp rum
Topping
- 1 ¼ cups heavy whipping cream
- 3 tbsp granulated sugar
- 1 ½ cups strawberry fresh
Instructions
Let's Begin!
- Preheat oven to 350°F. Line the bottom of a 9-inch springform pan with parchment paper, then grease the paper with butter or oil.
- In a large mixing bowl, beat egg yolks until slightly thickened. Gradually add ⅓ cup of sugar, beating on high speed until thick and lighter in color. Fold in flour, a third at a time.
- In a separate large mixing bowl, Place egg whites and salt. With clean beaters, beat on medium until soft peaks form.
- Gradually add the remaining ⅓ cup sugar, 1 tablespoon at a time, beating on high after each addition until the sugar is dissolved. Continue beating until soft glossy peaks form.
- Fold a third of the whites into the batter, then fold in the remaining whites. Gently spread into prepared pan.
- Bake until top springs back when lightly touched, 20-25 minutes. Cool for 10 minutes before removing from the pan to a wire rack to cool completely.

- In a small mixing bowl, mix cream, evaporated milk, sweetened condensed milk, and extracts.
