Biscuits are one of my favorite things to make. They are so versatile and can be made sweet or savory. These sweet potato biscuits are my new favorite thing. They are soft and fluffy with a little bit of sweetness from the sweet potatoes. The best part is that they are really easy to make. You just need a few simple ingredients, and you can have these delicious biscuits ready in no time!

Ingredients
  

Let's gather the ingredients!

  • 2 ¾ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp packed brown sugar
  • 2 tsp kosher salt
  • ½ cup unsalted butter cold, cut into 1/2-inch cubes
  • 1 cup sweet potato mashed/pureed
  • cup buttermilk cold
  • ½ cup unsalted butter melted, for brushing

Instructions
 

Let's Begin!

  • Preheat oven to 400°F. Line a baking sheet with parchment paper then grease with cooking spray or brush with melted butter.
  • In a large bowl, combine flour, baking powder, sugar, and salt.
  • Add butter and use your hands to rub the butter into the flour until about pea-sized.
  • Add mashed sweet potato and buttermilk and stir until a rough dough starts to come together. Use your hands to help knead flour into biscuits until it just holds together.
  • Turn the dough onto a clean surface and bring the dough together, using your hands to help incorporate any dry flour bits.
  • shape the dough into a ½-inch thick square. Fold the dough in half from left to right, then fold it in half again from top to bottom. Pat dough back out into a ¾-inch thick square.
  • Use a 2 ½-inch round cutter to cut biscuits out and place them on the prepared baking sheet.
  • Brush the tops of the biscuits with melted butter and bake for 20 minutes until the tops and bottoms are golden.
  • Serve warm and enjoy with family and friends!
