  • 8 oz. old-fashioned oats
  • 8 oz. milk see notes for a vegan substitution
  • 1 cup all-purpose flour
  • ½ tsp sea salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cardamom ground
  • 4 oz. brown sugar
  • 1 large egg beaten, at room temperature
  • 2 oz. olive oil
  • 1 tsp vanilla extract
  • cup pears ripe, fresh, diced

Crunchy Topping:

  • 3 tbsp brown sugar
  • 2 tbsp butter melted

Instructions
 

Easy-to-make muffins!

  • Preheat the oven to 400°F and grease the muffin tin.
  • In a mixing bowl, combine the old-fashioned oats and milk until the oats absorb the milk. Then, beat the eggs with brown sugar, and vanilla extract. Do not overmix.
  • In a separate bowl, whisk flour, baking powder, baking soda, cardamom, and salt. Set them aside. Then add them to the old-fashioned mixtures. Mix them well.
  • For the crunchy topping, toss to combine the butter and sugar, until the sugar dissolves.
